Thanksgiving is upon us! As we all sit down to dinner tomorrow, turkey is most likely on everyone’s menu. But the side dishes will vary between person to person, family to family and at The Easley Progress, we’re no different — everyone has their favorites. Here is a sampling:

Corn Pudding

1 can whole kernel corn, 1 can creamed corn, 1 pkg. corn muffin mix, 1 cup sour cream, 1/4 cup melted butter, 3 eggs.

Mix it all up and pour into a greased 9×13 pan. Bake at 375 degrees for 35-40 minutes.

Yummy!

Sweet Potato Souffle

6 sweet potatoes (peeled, baked and mashed), 1 stick of butter, 1 tsp. vanilla, 1 cup brown sugar, marshmallows or pecans.

Combine the potatoes with the sugar, butter and vanilla and pour into a 9×11 dish. Top with either the marshmallows or pecans and bake at 350 degrees for half an hour.

Scrumptious!

Broccoli Casserole

1 bag of frozen broccoli florets, 1 bag of shredded sharp cheddar (2 cups), 1 egg, 1 can cream of mushroom, 1 small chopped onion, 1 cup of dukes mayonnaise. Topping ingredients: 1 package of Ritz crackers crumbled, 1 stick of butter.

Mix melted butter with crackers.

Boil broccoli 6 minutes, drain, then add all ingredients with cooked broccoli and mix well. Add salt and pepper to taste. Pour into 9×13 non stick pan, add the Ritz cracker topping to it and Bake 30-35 minutes until golden brown.

Green Bean Casserole

1 can cream of mushroom soup, 1/2 cup milk, 1 teaspoon soy sauce, 1 dash black pepper, 4 cups cooked cut green beans, 1 1/3 cups French fried onions.

Stir the soup, milk, soy sauce, black pepper, beans and 2/3 cup onions in a 1 1/2-quart casserole dish and bake at 350 degrees for 25 minutes or until the bean mixture is hot and bubbling. Stir the bean mixture. Sprinkle with the remaining onions and bake for 5 minutes or until the onions are golden brown.

Baked Applesauce

5 tablespoons water, 1/4 cup packed brown sugar, 2 tablespoons lemon juice, 1 teaspoon ground cinnamon, 4 pounds apples, peeled, cored, and halved.

Combine all ingredients in a large Dutch oven, tossing to coat. Cover and bake at 375 degrees for 1 hour and 15 minutes or until apples are fork-tender, stirring once after 45 minutes. Mash with a fork and serve warm.

Baked Mac and Cheese

2 cups grated cheddar cheese, 1 egg, 2 cups milk, 1/2 stick of butter, 1 1/2 cups of uncooked pasta.

Boil the pasta, drain and rinse. In a small bowl, beat the egg. Combine the pasta, milk, butter, egg and half the cheese in an 8×8 pan. Top with remaining cheese and bake at 350 degrees for 25-30 minutes or until golden-bubbly.
